Pea and Ham Soup

A good old fashioned classic winter warmer of a soup. Split green peas and a ham hock soup ♥ It's a big favourite with my kids! I've adapted my recipe from Margaret Fulton's original.

Cook Time: 2 hours

Olive oil
2 onions, chopped
300g green split peas
2 Litres (8 cups) of water
Cracked black pepper
1 sprig of thyme
1 bay leaf
1 ham hock (700g+)
2 carrots, diced
1 cup diced celery
Salt to taste

Optional: 2 tsp minced garlic

  1. Place onions, carrots, celery, pepper, thyme and bay leaf in deep pot or saucepan with olive oil. Cook for 2 minutes until onions are softened slightly.
  2. Add split peas and water. Stir to combine.
  3. Add the ham hock and bring slowly to the boil. Reduce the heat and simmer for 1 hour.
  4. After 1 hour, take out the ham hock and cut all the meat from the bone removing fat/skin. Shred the meat and return to the pot to cook for another hour.
  5. Add salt to taste.
